Counting all of the teeth in our mouth, at times the sweet tooth can be the most problematic.
That’s what happens when you pamper it too much.
Spare the self-control, spoil the tooth.
Even if we turn on captivating songs about self-control, like Laura Branigan’s classic hit, it is easy to feel powerless against the temptation to eat the sweet cookie.

When it comes to great tasting sweet cookies, we certainly can relate. They are music to our ears and fat on our stomach.
Now there are plenty of sugarless cookies out there, which shall remain nameless due to their bland and sometimes medicinal taste and after crunching on them, very few of them are even worth mentioning.
You see, when crunch time comes, we still reach for the sweet cookie. It is so much fun.

Can’t there be a great tasting cookie low in sugar that we can munch on during our darkest hours and still feel good about ourselves?
You nui what? That’s right we said nui. We found a cookie that tastes great and is low in carbs and the dreaded sugar fix.
They are making a lot of low sugar noise.
As posted at cnbc.com, “Ketogenic dieting has taken 2018 by storm — the hashtag #keto yields nearly 10 million posts on Instagram alone. The so-called “keto” diet, is low-carb and higher in protein and good fats. That means eating less sweets, which can be hard to stick to.
Enter Nui cookies, a super low-sugar, high-fat cookie created to fulfill all keto dieters’ dessert dreams. The company landed a $300,000 investment from guest judge Alex Rodriguez on ABC’s “Shark Tank” on Sunday.”
Now that our friends is praise in high places. We want to meet them.
We receive an education at their informative site eatnui.com, “Our cookies have only 1g of sugar, which comes from our almond and coconut flours. We sweeten this gourmet yumminess with erythritol, a natural sweetener with a scientific name. Erythritol is found in fruits like grapes and pears. We also gathered a few monks to meditate and give us another low glycemic sweetener, monk fruit extract. Together the meditative properties of monk fruit extract and the science of erythritol create a flavor that tastes just like sugar without the sugary consequences.”
Good to know.
We want to know a little more about erythritol. Haven’t heard much about this element.
Erythritol is a sugar alcohol that has been approved for use as a food additive in the United States and throughout much of the world.
It was discovered in 1848 by Scottish chemist John Stenhouse. Erythritol was first isolated in 1852, but didn’t become commercialized as a sugar alcohol until the 1990s in Japan.
This is becoming more intriguing.
It occurs naturally in some fruit and fermented foods.
In the body, most erythritol is absorbed into the bloodstream in the small intestine, and then for the most part excreted unchanged in the urine. About 10% enters the colon. Because 90% of erythritol is absorbed before it enters the large intestine, it does not normally cause laxative effects, as are often experienced after consumption of other sugar alcohols (such as xylitol and maltitol).
That absorption factor is important. One of our friends consumed a package of candy that contained xylitol, based upon the claim that it was sugar free. Okay, that’s true. The problem though is they don’t tell you that consuming xylitol in volume will make you flush.
It’s not fun.
So we like that Nui cookies are not using a sugar free laxative. Painful experience can be the best teacher.

They oblige, “Unlike, wheat flours, our non-GMO nut flours have a tiny amount of net carbs and 6g of protein per serving. Okay, there is another word that we’ve heard of and must admit we don’t much about.

Simple explanations are best.
They add, “Ketones are produced if you eat very few carbs (that are quickly broken down into blood sugar) and only moderate amounts of protein (excess protein can also be converted to blood sugar). The liver produces ketones from fat. These ketones then serve as a fuel source throughout the body, especially for the brain.”
Copy that boss. The more we know about Nui cookies, the more we can see that a lot of thought went into designing and producing this product which appears to be good for us as customers.
