It’s been some time since we’ve had alfalfa on our mind yet in terms of a healthy food source, there are few better.
Alfalfa is a perennial flowering plant in the legume family Fabaceae.
It is cultivated as an important forage crop in many countries around the world. It is used for grazing, hay, and silage, as well as a green manure and cover crop.
The name alfalfa is used in North America.
The name lucerne is the more commonly used name in the United Kingdom, South Africa, Australia, and New Zealand.
Alfalfa is widely grown throughout the world as forage for cattle, and is most often harvested as hay, but can also be made into silage, grazed, or fed as green chop.
It has been cultivated as livestock fodder since at least the era of the ancient Greeks and Romans.
Alfalfa sprouts are a common ingredient in dishes made in South Indian cuisine and in salads in the United States. They are especially good on virtually any sandwich involving avocado.
In terms of alfalfa’s health benefits, the team at sfgate.com educate, “Alfalfa sprouts contain 9 percent each of your daily recommended intake of copper, folate and manganese. A 3.5-ounce serving of alfalfa sprouts provides 14 percent of your daily recommended intake of vitamin C.”
Very good to know.
There is some caution. Some of it is just plain common sense but here goes anyway.
Always wash your hands before handling sprouts, and rinse them thoroughly.
SFGate adds, “Alfalfa sprouts are extremely prone to carrying food-borne illnesses such as e. coli, listeria and salmonella, so it’s best to grow your own from thoroughly disinfected seeds or make sure that the sprouts are cooked long enough to kill any possible bacteria. People with a compromised immune system, such as pregnant women and the elderly, should not eat raw sprouts at all.”
We’ll definitely keep that in mind.
