It appears that we are going to be spending a lot of time at home.
The Coronavirus is something to be taken very seriously.
There must be a silver lining and we are going to try very hard to find it.
We don’t have to look too far. The refrigerator is pretty close. The freezer is pretty close too.
Let’s pick the freezer. Why?
There is comfort food there.
Caramel comfort.
Very cool.
Why is caramel so good? It seems to be pretty simple.
Caramel is a medium to dark-orange confectionery product made by heating a variety of sugars. It can be used as a flavoring in puddings and desserts, as a filling in bonbons, or as a topping for ice cream and custard.
The process of caramelization consists of heating sugar slowly to around 170 °C (340 °F). As the sugar heats, the molecules break down and re-form into compounds with a characteristic color and flavor.
A variety of candies, desserts, toppings, and confections are made with caramel: brittles, nougats, pralines, flan, crème brûlée, crème caramel, and caramel apples. Ice creams sometimes are flavored with or contain swirls of caramel.
Speaking of candy, which we love to speak of, Caramel candies are made by boiling sugar until it turns a light brown color, then mixing in cream, butter, and vanilla. Once the mix cools down, it becomes flexible and chewy. Salted caramel is made by sprinkling fleur de sel, or any other sea salt on top of the concoction.
Caramel tastes so essentially good. Keep in mind though that not every company can develop it deliciously.
By the way. We love caramel with coffee. Hugely.

If you’re going to have it with coffee, maybe caramel cookies would do.
Perhaps candy. Love the soft chewy kind except we just eat too many of them.
